Maple syrup, like wine, has subtle flavor differences across different regions. Many suppliers blend their syrup batches to produce consistency but they loose the subtle advantages of great batches of syrup.
While all maple syrup has it’s origins from sap from maple trees, maple syrup can loose depth of flavor the more it is processed. That’s why we try avoid as much processing as possible. We use a traditional wood fired evaporator and haul sap in tanks and boil it straight.
